The short answer

The exam covers eight areas across 80 questions, all drawn from the FDA Food Code. Contamination and cross-contamination carries 15 questions and personal hygiene and employee health carries 14 - together more than a third of the paper.

One thing this exam does better than most: it publishes its blueprint, with question counts, and the counts add up.

That is rarer than it should be. Plenty of awarding bodies publish weightings that round to 101%, or list topics with no numbers at all. Here you get eight areas, an item count against each, and a total of exactly 80.

Where the marks concentrate

Contamination and hygiene together are 29 of 80. That is more than a third of the exam sitting in two areas, and it is not an accident - they are the two areas where a manager's decisions most directly cause or prevent illness.

Preventing Contamination and Cross-Contamination - 15 questions

The published subtopics, with the provider's own item allocation:

  • Protect food packaging and food-contact surfaces from contamination - 4
  • Ensure food is stored properly - 4
  • Verify no bare-hand contact with ready-to-eat foods - 3
  • Dispose of wastes - 3
  • Monitor foot traffic of non-essential staff in preparation areas - 1

The bare-hand contact rule is worth three questions on its own and it is one people get wrong from experience, because plenty of kitchens are relaxed about it in practice. The Code is not.

Ensuring Personal Hygiene and Employee Health - 14 questions

Employee health policy is the area candidates most often underestimate. Knowing that a sick employee should not work is not the standard - the exam wants the reportable illnesses, who they are reported to, and what exclusion versus restriction means.

Whatever area a question sits in, a large share of this exam resolves to a handful of temperatures. These are worth memorizing to the point of reflex, with their Code citations:

The distractor you will meet

The Food Code also carries a 54°C (130°F) allowance for certain roasts. That number is not a trick invented by exam writers - it is real, and it is the strongest distractor against the 135°F hot-holding rule. Learn when it applies, not just that it exists.

That is unusual and it is worth exploiting. On most professional exams the examinable body of knowledge is scattered across textbooks nobody agrees on. Here there is one document, and you can read the provision behind any question you get wrong.

A change is coming

The 2026 edition of the Food Code is due, and providers realign to a new edition over the following year rather than overnight. Sixty-two provisions were touched by the 2024 Supplement alone. If you are sitting well into 2027, check which edition your provider has moved to.

Common questions

How many questions are on the food manager exam?

Eighty with National Registry, all scored, in 120 minutes. Other accredited providers differ - 75 questions is commonly reported elsewhere - so confirm the shape with whichever provider you book, since the exam formats are not identical.

What is the food manager exam based on?

The FDA Food Code, currently the 2022 edition as amended by the November 2024 Supplement. Every accredited provider builds to the Conference for Food Protection standard, which uses the Food Code as its reference, so the examinable content is the same across providers.

Which topic has the most questions?

Preventing Contamination and Cross-Contamination, at 15 of 80. Personal Hygiene and Employee Health is second at 14. Together they are more than a third of the paper, which makes them the obvious starting point if your time is limited.

Are the temperature rules really that important?

Yes. They cut across several content areas rather than sitting in one, so the effective weighting is higher than any single blueprint line suggests. Hot holding, cold holding and shell-egg storage are worth knowing to the exact figure.

Is the blueprint the same for every provider?

The body of knowledge is, because all accredited providers build to the same Conference for Food Protection standard. The item allocation on this page is National Registry's published one. Another provider may distribute its questions slightly differently across the same content.
