Key takeaway

Use these original food safety questions to practice applying a rule to a situation, then review why each distractor fails.

  • They are study examples, not questions from an exam provider.
  • The ServSafe Manager exam, for example, has 90 questions, 80 scored, and a 70% passing standard; other providers may use different exam formats and scoring.

Temperature controls

Hot holding

A steam table holds cooked chicken for a lunch service. What is the minimum temperature at which the chicken must be hot-held under the cited Food Code provision?

  1. 54°C (130°F)
  2. 57°C (135°F)
  3. 60°C (140°F)
  4. 63°C (145°F)
Answer: B. Food Code 2022 section 3-501.16(A)(1), as updated by its supplement, sets 57°C (135°F) as the general minimum for hot holding. The 130°F figure is an allowance for certain roasts under specified conditions, not a general hot-holding temperature. The higher options may sound safer but do not answer the minimum asked.
Cold holding

Sliced deli meat is held in a reach-in cooler as time/temperature control for safety food. What is the maximum holding temperature in the cited provision?

  1. 1°C (34°F)
  2. 5°C (41°F)
  3. 7°C (45°F)
  4. 10°C (50°F)
Answer: B. Food Code 2022 section 3-501.16(A)(2), as updated by its supplement, sets 5°C (41°F) or less for cold holding. The 45°F figure applies to ambient air for shell eggs in a separate provision, not to cold holding generally. Option A is colder than required and misses the word maximum.

Ready-to-eat food

Bare-hand contact

A line cook is assembling sandwiches during service. Which practice satisfies the Food Code's no-bare-hand-contact rule for ready-to-eat food?

  1. Wash hands, then handle lettuce and tomato directly
  2. Use tongs, deli tissue or single-use gloves as a barrier
  3. Wear gloves without washing hands first
  4. Handle food directly if the cook has no reportable illness
Answer: B. The rule requires an appropriate barrier against bare-hand contact with ready-to-eat food. Handwashing remains necessary, but it does not replace the barrier. Gloves also do not replace handwashing.

Employee health

Vomiting symptom

A food employee reports vomiting that began the previous evening. What is the manager's best first response under the Food Code employee-health framework?

  1. Restrict the employee to non-food-handling duties for the shift
  2. Exclude the employee from the establishment, then follow applicable reporting and reinstatement rules
  3. Allow work if symptoms stopped
  4. Reassign the employee to dishwashing
Answer: B. Vomiting can trigger exclusion under the employee-health requirements. Restriction and exclusion are different actions; assigning a task away from food does not automatically resolve an exclusion requirement. Apply the current code and local procedure to the facts.

Question review

  1. Answer before reading the explanation, then identify the fact in the stem that controls the decision.
  2. Read the cited provision in the source edition used by your exam provider or regulator.
  3. Write down the distractor you chose and why it looked plausible.
  4. Return to missed questions later with the choices hidden; same-session repetition can inflate recall.
  5. Use a full-length timed mock for pacing and question fatigue, not just short topic quizzes.

Provider format

Food manager credentials are offered through different programs, so do not assume every provider has the same exam length, timer or scoring. ServSafe currently describes its Manager exam as 90 questions, including 10 unscored pilot questions, with a passing score of 56 correct out of 80 scored questions. Check the exam provider's own bulletin for the exam you purchased.

Code edition

ServSafe says its current coursebook is updated for the Supplement to the 2022 FDA Food Code and its 2025 content blueprint. These sample explanations therefore identify the 2022 Code plus the 2024 supplement. FDA has since published a 2026 model Food Code. Because a model code must be adopted by jurisdictions and exam providers follow their own published materials, check the edition that applies to your local requirements and your exam.

Next practice step

Use the free Sitonce mock for a timed mixed set, then visit the topic practice pages for contamination, employee health, time and temperature, cleaning, storage and HACCP. For ServSafe's purchased exam or official course materials, use the provider's current product and exam information pages.

Provider and code edition matter

These are original study questions, not official ServSafe, NRFSP or other provider items. Food Codes are model standards; the local regulator determines the rules adopted in its jurisdiction. Verify your exam provider's current blueprint and your jurisdiction's requirements.

Common questions

Are these real ServSafe exam questions?

No. These are original study examples and are not copied from a ServSafe or other provider exam. Use the provider's official practice tools to learn its own materials and current delivery format.

How many questions are on the ServSafe Manager exam?

ServSafe currently says the exam has 90 questions, 80 of which are scored. Its published passing standard is at least 56 correct answers out of the 80 scored questions.

Does every food manager exam use the same passing score?

No. Exam format and scoring depend on the provider. Confirm the current handbook and score rules for the program you plan to take.

Which FDA Food Code edition should I study?

Use the edition identified by your exam provider, and check the rules adopted by your local regulator. FDA's 2026 Food Code is its latest model code, but jurisdictions and providers may transition on different schedules.

What should I do after missing a practice question?

Identify the controlling fact, read the cited rule in the applicable source edition, and record why the distractor looked reasonable. Return to the concept later with a new question.
