Allergen training is a separate requirement in some states

Compiled by the Sitonce editorial team from the FDA Food Code and the accredited providers listed belowUpdated 3 min readFacts verified 1 September 2026
The short answer

Manager certification covers allergens as part of the Food Code, and several states separately require allergen awareness training and notices. Holding one does not satisfy the other, though the material overlaps heavily.

Two requirements, considerable overlap, and they are not interchangeable.

What your manager exam covers

The nine major allergens. Cross-contact and why it differs from cross-contamination. Why cooking does not destroy an allergen. Separate preparation and equipment. Two of the eighty questions sit specifically under developing a food allergen plan.

That is a solid foundation and it is not a dedicated allergen course.

What a dedicated allergen course adds

  • Recognizing the signs of an allergic reaction, including anaphylaxis.
  • What to do when one happens, and when to call emergency services.
  • Handling the customer conversation in more depth.
  • Menu labeling and ingredient disclosure practices.
  • Written procedures for allergen orders through the whole service.

The reaction-response material is the genuinely additional part. The Food Code is about preventing exposure; it says much less about the minutes after one.

Where it is separately required

Massachusetts requires allergen awareness training and notices. Several other states and localities have their own requirements, and the picture changes as legislation moves.

Rhode Island, Michigan and Illinois have all had allergen provisions of various kinds. Check your own state rather than assuming, because this is one of the faster-moving areas of food safety regulation.

Sesame is the currency check

Any allergen material listing eight major allergens predates 1 January 2023, when sesame became the ninth under the FASTER Act. It is a ten-second test of whether a course is current.

The overlap works in your favor

Studying for the manager exam covers most of a basic allergen course, and the reverse is partly true.

If you need both, do the manager certification first. It is the broader qualification and the regulatory baseline, and the allergen course then adds the reaction-response layer rather than repeating the basics.

Why it matters commercially

An allergen incident is more foreseeable than most food safety failures, because the customer told you. That makes it harder to defend afterwards, and it is why allergen handling is increasingly a written procedure rather than a habit.

A manager who can describe the establishment's allergen procedure clearly is demonstrating something an inspector and a customer both care about.

Common questions

Does food manager certification cover allergens?

Yes, as part of the Food Code - the nine major allergens, cross-contact, why cooking does not help, and separate preparation. Two of the eighty questions sit under developing an allergen plan.

What does a dedicated allergen course add?

Mainly reaction response - recognizing anaphylaxis, what to do and when to call emergency services - plus deeper menu labeling and written procedure material.

Which states require allergen training separately?

Massachusetts requires allergen awareness training and notices, and several other states and localities have their own provisions. This area moves, so check your state directly.

How do you tell whether allergen material is current?

Count the allergens. Any list of eight predates 1 January 2023, when sesame became the ninth major allergen under the FASTER Act.

Which should you do first?

Manager certification. It is the broader qualification and the regulatory baseline, and an allergen course then adds the reaction-response layer rather than repeating the basics.
