The short answer

Eight hours over three days: temperatures and contamination on day one, employee health and the flow of food on day two, a mock and targeted review on day three. Facilities and pests get twenty minutes between them.

Three days is tight and it is doable. It requires accepting that you will not cover everything evenly, which is the correct approach anyway.

Day 1

Ninety minutes on time and temperature: the four cooking numbers, hot and cold holding, two-stage cooling, reheating, thawing, date marking. Say them aloud.

Then ninety on contamination: storage order, bare-hand contact, food-contact surfaces, waste, cross-contact versus cross-contamination.

That is fifteen questions plus the temperature material that appears throughout the paper. It is the highest-return three hours available.

Day 2

Ninety minutes on employee health. Exclusion versus restriction, the Big 6, the reporting chain, handwashing, gloves, and what changes for a highly susceptible population.

Then ninety on the flow of food and cleaning: receiving temperatures, rejection criteria, storage, the three-compartment sink, sanitizer concentrations.

Day 3

One full mock, timed, in the morning. Then review every miss to the provision, and spend whatever remains on the areas it exposed. Then patch.

If the mock comes in under 70 per cent, postpone. A retake costs about USD 60 plus another session, which is more expensive than another two days.

What you are choosing to skip

Facility design, pest control and the detail of HACCP. That is roughly eleven questions. Read the headlines - 10, 20 and 50 foot-candles, the three-part pest strategy, the seven HACCP principles - and accept that you will not have depth there.

How to make eight hours behave like twelve

  • Practice questions from the first hour, not after reading.
  • Every temperature learned with its food and its reason.
  • Say the rules aloud. Recall is what is being tested, and reading is not recall.
  • Review misses by naming the provision, not the letter.
  • No highlighting. It feels productive and it is the least effective thing you can do.

When three days is the wrong plan

If you have never worked in a commercial kitchen, three days is not enough - the vocabulary and the scenario sense both need building first.

And if you can wait a week instead, wait. Three days is for people with a start date, not for people who want it over with. Three days is a deadline plan.
