The allergen requirement is the one people miss
Massachusetts requires food establishments to have staff trained in allergen awareness, and to display allergen notices. It is separate from manager certification.
Two obligations, two documents. Holding a manager certificate does not satisfy the allergen requirement, and allergen training does not satisfy the manager one.
This is worth knowing because it is a genuine local addition rather than a variation on the national pattern.
The manager requirement
A person in charge who holds an ANAB-accredited certificate, where the establishment prepares or serves TCS food. Valid five years, no state-specific exam.
The allergen material overlaps heavily with what the manager exam already tests - the nine major allergens, cross-contact, and why cooking does not help. Studying one covers most of the other.
Local boards of health
Massachusetts delegates enforcement to municipal boards of health, and Boston, Cambridge, Worcester and Springfield all publish their own permit processes.
The certificate requirement is state-level; the permitting is local.
Getting certified
- Choose any ANAB-accredited provider unless your state names an approval list.
- Prepare for eight to fifteen hours, weighted to contamination and employee health.
- Sit the 80-question proctored exam, at a test center or under remote proctoring.
- File the certificate with your employer for the health department record.
- Schedule the five-year expiry the day you receive it.
