Online proctored or test center: which to choose

Compiled by the Sitonce editorial team from the FDA Food Code and the accredited providers listed belowUpdated 3 min readFacts verified 1 September 2026
The short answer

Remote proctoring costs about USD 48 against about USD 60 at a center, and can usually be booked sooner. A test center removes the technology and environment risk, which is why candidates with unreliable internet or a busy household should use one.

Both are legitimate, both produce the same certificate, and the choice is about your circumstances rather than about difficulty.

What remote proctoring requires

  • A computer with a working webcam and microphone, and a stable connection.
  • A private room where nobody will enter for the duration.
  • A clear desk - no notes, no phone, no second monitor.
  • A room scan on camera before starting.
  • Government-issued photo identification.
  • No talking, no leaving the frame, no reading questions aloud.

The room scan catches people out. A poster of temperature ranges on the kitchen wall behind you is a problem, and so is a bookshelf the proctor wants examined.

Run the system check early

Every provider offers one. Run it days before, not an hour before, because a failed check on the morning of the exam usually means rebooking and paying again.

Who should choose a center

Anyone with unreliable internet. Anyone sharing a home with people who will not reliably stay out of a room for two hours. Anyone who finds being watched on camera more stressful than being watched in person.

Also anyone who has already had a session terminated remotely. It happens, usually for something trivial, and it is not worth a second time.

Who should choose remote

Anyone who is short of time, lives far from a center, works shifts that make a fixed appointment awkward, or simply prefers their own desk.

It is also the cheaper option by around twelve dollars, which is not nothing when you are paying for the exam yourself.

What is the same

The exam. Same 80 questions, same 120 minutes, same scaled score, same certificate, same acceptance by health departments.

There is no version of this that is easier, and any provider suggesting otherwise is selling something.

Common questions

Can you take the food manager exam at home?

Yes, through remote proctoring, with a webcam, a private room, a clear desk and photo identification. The exam and the certificate are identical to the test center version.

Which is cheaper?

Remote proctoring, at about USD 48 against about USD 60 at a test center. That is the proctoring component; the exam fee itself depends on the provider.

What can go wrong with remote proctoring?

Connection drops, failed system checks, someone entering the room, and items visible during the room scan - including temperature charts on a kitchen wall. A terminated session usually means rebooking and paying again.

Who should choose a test center?

Anyone with unreliable internet, a household they cannot guarantee will stay out of a room for two hours, or a previous session terminated remotely.

Is the online exam easier?

No. Same eighty questions, same 120 minutes, same scaled score, same certificate and same acceptance by health departments. Any provider implying otherwise is selling something.
