The night before: fifteen minutes, then stop
One fifteen-minute pass over the temperature and time numbers, then stop. Sort out identification, route and timing, and sleep. Late cramming on a recall-heavy exam reliably costs more than it adds.
The evening before is when people do the most damage to their own result.
The fifteen minutes
Say them out loud, food to number.
- 165 poultry, stuffed foods, reheating for hot holding, microwave
- 155 ground and mechanically tenderized meat
- 145 whole cuts, seafood, eggs to order
- 135 hot holding, and plant food held hot
- 41 cold holding - 45 for shell eggs only
- 135 to 70 in 2 hours, 70 to 41 in 4 more
- 7 days date marking, prep day is day one
- Chlorine 50 to 100, quats 200 to 400, iodine 12.5 to 25
- Exclude vomiting, diarrhoea, jaundice. Restrict sore throat with fever.
That is the exam's recall spine. If it comes out cleanly, you are in good shape and there is nothing else useful to do tonight.
The practical list
- Photo identification out, unexpired, name matching the registration.
- Confirmation number saved somewhere you can find it.
- Route and parking checked, or the remote system check already run.
- Alarm set with enough margin to arrive early.
- Household told, if you are sitting remotely.
Every one of these is a way the morning goes wrong, and all five take ten minutes to remove.
Recall material consolidates during sleep. An hour of study at eleven at night costs an hour of sleep and adds material that will not be consolidated by nine in the morning. It also produces the tiredness that causes people to misread the word NOT.
If you feel unprepared
Two honest options: sit anyway, or move it.
Sitting anyway is reasonable - a retake costs about USD 60, the result gives you content-area feedback, and plenty of people pass an exam they felt unready for. Moving it is also reasonable if you genuinely have not covered the two big areas.
What is not an option is staying up until two trying to fix it. That converts a marginal position into a worse one.
In the morning
Eat something. Two hours of concentration on an empty stomach is a self-inflicted handicap.
Read the numbers once more on the way, then put them away. Arrive early enough that the last fifteen minutes are calm rather than spent finding the building.
Common questions
What should you study the night before the food manager exam?
One fifteen-minute pass over the temperature and time numbers, said out loud, food to number. Then stop - there is nothing else useful to do that evening.
Why is late cramming counterproductive?
Recall material consolidates during sleep, so an hour at eleven costs sleep and adds material that will not be consolidated by morning. It also causes the tiredness that leads to misreading negatively phrased questions.
What practical things should you sort out?
Identification that is unexpired and matches your registration, the confirmation number, route and parking or the remote system check, the alarm, and telling the household if you are sitting at home.
What if you feel unprepared the night before?
Sit anyway or move it - both are reasonable. What does not work is staying up until two trying to fix it, which turns a marginal position into a worse one.
Should you eat before the exam?
Yes. Two hours of sustained concentration on an empty stomach is a self-inflicted handicap, and there is no benefit to skipping breakfast.
