Answer: C - Exclusion, a food employee with diarrhoea being excluded, and the establishment serving a highly susceptible population in any event

Because A food employee who is symptomatic with vomiting or diarrhoea must be EXCLUDED, except where the symptom is from a non-infectious condition. Reinstatement follows the symptom-free period the provision specifies, or medical documentation. Food Code 2-201.12

The establishment serving a highly susceptible population raises the stakes throughout the health provisions, and for several symptoms and diagnoses it is what converts a restriction into an exclusion. Food Code 2-201.11

Where the other options lead

  • A.Assumed symptoms mean restriction. Vomiting and diarrhoea attract exclusion. Restriction applies to other symptoms and to some diagnoses.
  • B.Treated it as private. It is one of the five reportable symptoms, and the person in charge must act on the report.
  • D.Reassigned within the premises. That is restriction, which is not the response to this symptom. Exclusion keeps the person out of the establishment.

Answer: C - The person in charge must provide records the Code entitles them to see

Because The person in charge must allow the regulatory authority to determine compliance by allowing access, allowing inspection, and providing information and records specified in the Code to which the regulatory authority is entitled. Food Code 8-402.11

During a suspected outbreak those records are the investigation. Temperature logs establish whether a control failed; illness records establish whether a handler was the source. Delay costs the investigation its window. Food Code 8-401.10

Where the other options lead

  • A.Offered a summary. A summary is the establishment's account of its records. The investigator is entitled to the records themselves.
  • B.Withheld pending advice. The Code entitles the regulatory authority to the records. Delay is not a legal strategy available here.
  • D.Limited the period. The entitlement is to the records the Code specifies, and an outbreak investigation reaches back past the current month.

Answer: D - That the two-stage cooling schedule is met, and that ready-to-eat cooked chicken is not contacted with bare hands during portioning

Because Cooked TCS food must be cooled within 2 hours from 57°C (135°F) to 21°C (70°F) and within a total of 6 hours to 5°C (41°F) or less, and separating food into smaller portions is one of the named cooling methods. Food Code 3-501.14

Cooked chicken is ready-to-eat, so portioning it requires a suitable utensil rather than bare hands. Two provisions apply to the same act, which is what makes this a monitoring point rather than a single check. Food Code 3-301.11

Where the other options lead

  • A.Read the first stage as guidance. Both limbs are requirements, and the first is where most of the growth risk sits.
  • B.Compressed the schedule. Two hours is the first stage to 70°F. The total to 41°F is six hours.
  • C.Reheated before cooling. The chicken is already hot from cooking. Reheating it adds a cycle and achieves nothing.
